Zarugai clams are rarely seen in Japan, making them a truly special ingredient.
At Shirato, we gently cook the clams to preserve their natural texture and purity.

The flesh remains remarkably fresh and tender, offering a clean umami and subtle sweetness.
We pair it with the delicate sweetness of lily bulb and a touch of citrus acidity,
