Sekogani, the female snow crab, is a cherished winter delicacy in Japan.
At Shirato, we present this ingredient in its entirety—
the meat, the rich inner roe, the delicate outer roe, and a jelly made from the shells’ essence.

The base of the dish is a light cauliflower mousse,
its gentle sweetness providing balance to the deep umami of the crab.
Each element is layered with care, allowing texture, richness, and aroma
to unfold gradually with every bite.

Rather than seeking boldness, this dish focuses on clarity and restraint,
highlighting the inherent character of the ingredients.
