My restaurant, Shirato, features innovative fusion cuisine. I craft a multi-course French meal consisting of more than 20 dishes every day with ingredients that I carefully select and purchase from all over Japan for customers, especially from overseas, to enjoy.
To me, "innovative fusion cuisine" does not mean unique nouvelle cuisine or fancy dishes dressed with colorful sauces. It means the most delicious food created with the best ingredients available at that time at that place.
I am open to new ideas and have tried to create all different kinds of dishes. Food is such an important part of life. Enjoy one of Japan's best at Shirato.

Shirato only offers the multi-course meal of the day featuring many small portions of French dishes that bring out the full flavor of ingredients.
In order for you to enjoy a wide variety of food, I make every effort to craft low-carb, low-sodium, and low-fat dishes. For example, when I flavor black-throat seaperch, one of the most popular ingredients from Noto, I use a broth that I create with its bones grilled over Binchotan Charcoal and a white wine sauce instead of butter.
I take plenty of time to prepare delicious dishes that you can enjoy only at Shirato only at the time you visit using fresh seasonal ingredients.

As is shown in the name, Shirato, which literally means white soil or white earth, my restaurant is characterized by white earthen plaster walls. Natural materials such as wood, soil, and stone are used in the interior design to provide a relaxing ambience.
