Cod milt / Spinach

Cod milt, a symbol of winter in Japan, is served as meuniere. Underneath is a layer of shredded spinach sauteed in butter. It is served with a burnt butter sauce with yuzu juice and roasted almond slices. This dish combines French-based cooking techniques with seasonal Japanese ingredients. Enjoy!
