Char-grilled pigeon dish

We use only the breast meat of a luxury pigeon from France” from Lacan”. We start with slowly and carefully to put on a low tone, and finish it with a charcoal fire. The sauce is based on “Ju de Pigeon” that taken from the bones of pigeons, and it is rich in taste of sauce with black garlic puree and Japanese Hatcho-miso.
