Sea urchin and caviar mousse

A white mousse made from white asparagus that mixed with a sea urchin and caviar from the Noto peninsula in Ishikawa prefecture. Seasonal vegetable mousse prepared with cauliflower and turnips, etc. depending on the season, we put a sea urchin and caviar on top of each other, making this menu like a luxurious parfait.
