Roasted Duck Breast with Confit of Momo Meat

We use only one duck from Tsubame-Sanjo, Niigata Prefecture. Since the whole duck is used, the broth is made from the bones and used as a sauce, the thigh is moist and confit, and the breast is simply roasted.
We do not add any aromatic flavor to the duck, allowing the guests to enjoy the duck’s true taste.
