Poached chicken grunt (a method of cooking in which ingredients are slowly simmered in liquid).
The meat of the chicken grunt is poached in a broth made from the bones of the chicken grunt.
In this case, it is combined with wild ginseng and Japanese parsley, and is served with leafy vegetables that are in season.
