Cappellini with Salted Sea Urchin

Hokkaido sea urchins, which do not have any odor, are crushed and mixed with ayu fish sauce, kabosu juice, and olive oil to make a sauce to be served with Cappellini. The sauce is then combined with Cappellini and finished with the aroma of union and kabosu.
